The Glow of a New Day
Like a postcard of dawn over the vineyards, Aurora is born in light soils with good morning sun exposure. It reflects a landscape where cypress trees and blossoming almond trees coexist with the vines. The Pinot Noir is harvested first, and after a gentle pressing, the free-run juice is kept with its lees until the Sauvignon Blanc harvest. The latter undergoes a three-hour skin maceration before blending the musts, which then ferment at a low temperature to preserve their subtle profile.
